I tried my hand at Zha Jiang Mian (Fried Sauce Noodles) which is a specialty of northern China. It is served everywhere. In homes, restaurants and as a popular street food. It is a dish consisting of thick wheat noodles topped with a mixture of ground pork stir-fried with fermented sweet bean paste, ground bean paste, dark soy sauce and garlic. Basically a thick meat sauce served over thick, chewy, wheat flour noodles. Its popularity moved into Korea, where it is known as Ja Jiang Mein or Ja Jang Myun.
This is street food at its finest. It is cheap and servings are large. I recently had a large bowl of this at a small local shop and had to reproduce it. Frying in the wok Served with sliced carrots, cucumbers and scallions. |
