Today I made Risotto which is the main ingredient for SUPPLI AL TELEFONO, (click here for the link to the making and recipe). Risotto is a wonderful Italian side dish that is perfect on its own.
 
here are the goods-
 
 
Everything is prepped. half a cup of grated parmesan, chopped onion, Four tablespoons butter, etc...
 
 
sautee the onion with 4 tablespoons butter over medium heat, untill translucent, but not brown, then I added two cups of rice, I sauteed that for two minutes.
 
 
Then I added one cup of dry white wine. Inexpensive grocery store chardonnay is the best, it's got a sturdy taste.
 
 
While stirring occaisionally, I let it boil off, Then I added two cups of homemade chicken stock.
 
 
I stirred it occasionally, untill that boiled off, and did that three times. The last two cups had the saffron in it.
 
 
The above picture shows it boiling off, and just about ready. At this point I added the grated parmesan and four tablespoons of butter, stirring in well untill it all melted.
 
 
At this point it is ready! This makes a perfect side dish for any Itallian meal. Here is a plated picture that we tasted.
 
 
The risotto went into the fridge untill tomorrow when we will turn it into Suppli Al Telefono (Itallian fried cheese balls).
