Good Morning,
 
 
We are big fans of  healthy natural Gazpacho style sipping whether it is summer, winter, spring or autumn. It is versatile and can be prepared with most seasonal fruits.  
 
This recipe comes from Chef Ferrán Adriá´s Book, The Family Cookbook or La Comida de La Familia and is lovely for breakfast.
 
 
  
 
This book is available via Phaidan or Amazon, www.amazon.com in English or Spanish.
 
The culinary artist who worked for El Bullí and created this Gazpacho version is Jessica Maria Román.
 
 
Rasberry Gazpacho
 
1/2 kilo rasberries
1/4 kilo red ripe juicy tomatoes
1/2 sweet onion
1/2 carrot
1/2 Golden Delicious
1/2 lime zest ( rind ) grated very finely
2 Greek Yogurts ( not Danon )
1/2 clove garlic
12 tblsps. Evoo
4 tblsps. White Cider Vinegar
1/2 tsp. salt
freshly ground black pepper
 
1) wash all vegetables and fruits; seed and core and place these fruits, and veggies in a blender or food processor or mix electrically adding the garlic, Evoo and Vinegar very very gradually.
2) Add  1/2 Litre ice water and combine well again
3) place in refrigerator for 2 hours, so all the flavors merge
4) serve in cocktail glasses or Martini stemware with a few extra rasberries on top for garnish
 
Simple, healthy and rasberries can be subbed; for blue berries, cranberries, strawberries when in season and black berries.
 
We used frozen rasberries thawed all night. Very tasty and provides a ton of kick off energy after a long night of eating too much !
