This recipe comes from The Book,  Julia Child & Jacques Pepin Cook at Home .. 
It is one of the best potato salads I have had.

Depending on you, I use 3 small red potatoes per person 
Salt of choice 
Black fresh peppercorns grinded
2  extra large hard boiled eggs
The following To Taste:
50 to 75  grams Green scallion diced finely
1 / 2 onion minced
2 cloves minced garlic
2 tablespoons of Dijon Mustard of Choice
1 tablespoon of Mayonaisse home made or of choice
3 tablsps of minced fresh chive herb
2 tblsps of fresh Genovese Basil minced
1 Tablep of fresh parsley minced finely
75 ml. White wine 
75 ml.  Italian or French Evoo 

Set up the plate with  large radicchio leaves and fill the leaves with the potato salad.

1)  Boil the potatoes until done through but a bit firm .. 
2)  Drain the potatoes thoroughly. 
3)  In a large glass bowl, place the sliced in half potatoes and the scallion, garlic, onion, and herbs, and sprinkle with salt and freshly ground pepper ..

4)  Make the dressing on the side and serve in a sauce boat .  

Very lovely  ! It is more than enough for me
however, make as many potatoes as you can eat or 
for your company & adjust the recipe to suit how many people you have ..
