May 15th is the Spanish Patron Saint´s Day,  San Isidro Day celebrated with Rabo de Toro throughout the city and many other parts of the Iberian Peninsula ..

In the Iberian Section, there is a remarkably extraordinary recipe from Navarra, which both The Founder Tas and I have prepared time and time again ..

So,  is any one up to preparing Rabo de Toro ( Ox tail )  on the weekend of the 12th May  ?

How do you prepare your´s   ?

Good substitutes for those abroad in North America, could be bull´s tail from beef cattle ..

Have a lovely week ..

We are on holiday here, as May 1st is Spain´s  Labor Day and it is a bank holiday.

May 2nd are local municipal holidays throughout Spain ..

Sunday May 6th, is Mother´s  Day.

So off for the entire week which gives me a chance to catch up on uncountable projects ..

The Spanish certainly enjoy their oxtails, and prepare them wonderfully - I have made two versions of Navarran oxtails - both were very good!

To celebrate 15 May - here are links to the two versions of oxtails from Navarra that I have made:

If anyone tries either of these, I would really like to see what you thought about your experience - and please do feel free to post a photo or two!
