Looking it over, I found this link, regarding a risk of Lysteria with refrigerated fermented pickles; since I just finished a batch of these, it caught my eye and I am posting it here for discussion:

Well, now I am curious - based on the reading in that Lysteria link above, are the pickles I am currently making safe in the refrigerator?

The sauerkraut I made was fine after 7 months, so I'm not sure why the pickles wouldn't be...?

Seems like a rather incomplete study, or at least reporting of it to me. It does not list what the final listeria counts were, and despite noting a decrease in counts during refrigerator storage notes nothing of how long they were stored, at what temps, etc. Nor at what point (if any) they would be safe to eat. Only that 'well after' the 3 days of refrigeration called for in 'old' recipes the listeria 'may' still be viable.

Given that people have been eating these for years, I'm going to chalk this one up as another scare tactic. If you really feel that they might have a valid point, don't let kids, pregnant women or people with weakened immune systems eat them. Beyond that I'm betting that you'll be fine.

I still have some of the pickles I made this summer floating around in the jar in the back of my fridge. maybe I'll eat a couple tonight and if you don't hear back from me then maybe they have a point. Dead LOLLOLLOL

I won't worry about it too much, but it was definitely one ting that caught my eye.

As for the main page with the other links, there looked to be some great information there. I'll be exploring it a bit as I get deeper into this whole thing!
