The high temperatures deplete our bodies of liquid nutrients and thus, here is a lovely summery salad combining tagliatelli, strawberries, smoked salmon and fresh shrimp ... Easy to prepare and refreshing ...
This salad is a favorite at a lovely Puglia, Italia restaurant bar which we found ... and return to ...
300 grams tagliatelli
100 grams grilled large shrimp ( grill shrimp in Evoo )
150 grams smoked salmon or smoked cod fish
150 grams fresh strawberries sliced in half
chopped fresh basil
sal and black pepper freshly ground
1 tblsp. lemon zest
25 grams of creamy style French butter
1. rinse the shrimp well
2. slice the smoked fish into strips julienne
3. prepare the pasta in a pot of salted water with a tblsp. of Evoo and boil until tender yet firm ** al dente
4. sauté the zest in the butter and add salt and pepper
5. create a rainbow in a large bowl: place the pasta first, then the shrimp and then the smoked fish and then, the basil... Drizzle with the melted lemon butter
Enjoy ... serve with lovely grissini breadsticks and / or rustic country bread and a Prosecco to sip ... or ice cold beer ...
