Quote Salsa di Pomodori
Tomato sauce

Makes about 1 1/2 cups

2 tbsp olive oil
1/2 cup finely chopped onions
2 cups Italian plum or whole-packed tomatoes, coarsely chopped but not drained
3 tbsp tomato paste
1 tbsp finely cut fresh basil or 1 ttsp dried basil
1 tsp sugar
1/2 tsp salt
Freshly ground black pepper

Using a 2- to 3- quart enameled or stainless steel saucepan, heat the olive oil until a light haze forms over it. Add the onions and cook them over moderate heat for 7 to 8 minutes, or until they are soft but not browned. Add the tomatoes, tomato paste, basil, sugar, salt and a few grindings of pepper. Reduce the heat to very low and simmer, with the pan partially covered, for about 40 minutes. Stir occasionally.

Press the sauce through a fine sieve (or food mill) into a bowl or pan. Taste for seasoning and serve hot.

This is a good sauce if you have a bunch of the canned ingredients around. We usually make a bunch of sauce during the summer and freeze it but I went ahead and did this recipe to follow the book. I liked that it simmered for just about the same amount of time that it took everything else to get ready, no matter what other recipe we were making!

And we just used a stick (immersion) blender instead of a food mill.

excellent, marissa ~ i always look at that sauce recipe and want to try it. i came up with a really good sauce recipe a couple-three years ago:
 
 
it's a little more "involved" where ingredients are concerned, but it sure tasted great!

I do like a bit more involved tomato sauce really. That ones looks great. I have a tomato basil sauce from last summer we are just working our way through the last quart of. I can't wait for tomato season again. I'm going to freeze a lot this year.

And crikey, spell check went on the fritz when I posted that recipe! I went back and fixed the dozen or so typos I saw! Yikes.
