        "She who must be obeyed" put in a request a couple days ago for some nice homemade lasagna, as she often does this time of the year.

I figured "what the heck" might as well do it right and make the pasta too. If more folks realized how damned easy it is to make pasta, I have to believe they'd make it often.

You start out by sifting 3.5 cups of flour into your KA mixing bowl


then you add 1/2 teaspoon of salt, 4 eggs and 1/2 cup of water and mix it on speed 2 for 30 seconds with the paddle attachment


Change out the paddle attachment for the dough hook and knead on speed 2 for two or three minutes


Then put the dough on your board and knead by hand for another two or three minutes,,,wrap in plastic wrap and let it rest while you start the sauce...you can roll out the pasta after the sauce is simmering


I like to start my sauce with a little pepperoni sauteing with the onion and garlic...I like the spiciness this adds to the final sauce


Then the Italian sausage and ground beef, tomato paste, tomatoes and spices


After the sauce simmered for an hour or two I put the whole mess together..starting with sauce, then pasta, then sauce, then ricotta, then sauce, then mozzarella, etc...till done



Made a quick garlic bread while the lasagne cooked...pulled the lasagne out after 30 minutes, topped with grated pecorino romano and tossed it back in for another 30 minutes



Then pulled it out and let it rest while the bread browned up


Made a little tossed salad and served


As you can see from the last picture...I didn't let it rest long enough before cutting, so it kind of "mushed out" on me a little.

lol - well, now you've gone and done it with that beautiful lasagne, dave ~ mrs. tas would really like to see this on the table!
