Have you ever given serious consideration to whether or not there is life after death? Well, you when you taste this recipe for Saganaki, you'll know that there is a heaven, and you've just been given a little preview of it.
If I had to pick one thing that I've eaten in my life that was absolutely the best thing to ever cross my lips, this would be the dish. Saganaki 4 - 1/2 inch thick slices Kasseri cheese* 1 cup milk 1/2 cup seasoned flour 3/4 cup olive oil 2 Tbsp butter 1 ounce Ouzo Lemon wedges Soak the cheese in milk, refrigerated for 1 hour. Remove from milk and coat well with seasoned flour on all sides. Heat oil and butter in large skillet until hot, but not smoking about 5 minutes. Fry cheese for about two minutes on each side, until nicely browned. Carefully add Ouzo and flambe' shouting "opa!" Squeeze lemon wedges over and serve immediately. * If you can't find Kasseri, Haloumi, Parmesan or Pecorino Romano may be substituted...basically, any good quality hard cheese. I scored some Kassari this morning at the Whole Foods market...only place that carries it around here, as we do not have any kind of "Greek Town".
I'll take pics when I make it....might be a while though...Mom's in the hospital, so that is keeping us pretty busy.
