Serves 4

Free on Extra Easy (add 6 syns if not using chicken as healthy option on Green)

2 roasted chicken legs, (skinned, boned and shredded)
200gms baby leeks or large spring onions, (finely chopped)
1 clove garlic (crushed)
15 baby plum or cherry tomatoes (halved)
200gm canned sweetcorn (drained)
1 tbsp chopped chives (or 1 teaspoon dried mixed herbs)
1 tbsp fresh coriander leaves (finely chopped)
3 tbsp soy sauce
150gm fine egg noodles (cooked as per packet instructions)
6 eggs (beaten)
100ml natural yogurt
Low-calorie spray oil such as 'fry light' or 'pam'

Fry the chicken, leeks and garlic for 1-2 minutes, add tomatoes, sweetcorn, herbs and soy sauce and fry for another minute. Add cooked noodles and distribute evenly through the mixture. Combine beaten eggs and yogurt, add seasoning according to your own preference.

Pour the egg mixture into the pan ensuring it is evenly spread. (Don’t worry if at this stage some noodles peek out of the top of the mix). Cook over a low heat for 4-5 minutes then place under a preheated grill until the mix is set and then brown the top if preferred.

Transfer frittata to a large plate, slice into four and serve with a large mixed green salad or new potatoes and mange tout.

It always gets a good reception.  If there any left-overs, I take them to work with a cold salad for lunch

i like the ingredients in this one, and it looks to be worth a try ~ all the ingredients should be close at hand.Thumbs Up

I love frittatas and make them often....this one sounds so different I'm just going to have to try it. Does it "set up " alright with all the tomatoes in there Gareth, or is it a little on the runny side?

It isn't a problem, as they are only small (less than an inch big). If you use larger ones, cut down on the numbers of tomatoes.
