while this comes from western canada it is fine to use for ducks obtained elsewhereWink
duck breasts
green chillies (small can)
swiss cheese
salt/pepper
a bit of cayenne pepper (if desired)
creamy italian dressing
sliced bacon

Pound a half breast flat
spread a couple teaspons of the green chillies on top
dice the swiss cheese and spread over the top
If you want a bit of heat, now sprinkle a bit of cayenne over
wrap the whole breast into a roll
wrap a slice of the bacon around the breast and toothpick together
grill on a piece of aluminum foil at about 325 for 15 minutes
pour a generous amount of the creamy italian dressing over the top
complete grilling (about another 15 minutes)

this same recipe work well with the better eating types of geese also (specks for instance)

Never been a huge fan of duck but it sounds pretty darn good when prepared like this.
